                    十二烯基琥珀酸环糊精酯的制备及其乳化性能

                 摘要:采用湿法工艺以十二烯基琥珀酸酐(DDSA)和 β-环糊精(β-CD)为原料制备了十二烯基琥珀酸环糊精
                 酯(DDS-β-CD)。通过 FTIR 对 DDS-β-CD 结构进行了表征。结果表明,DDS-β-CD 的热稳定性与 β-CD 相比有
                 所降低,但是分解温度仍高达 225  ℃,满足在食品、日化、微胶囊等领域的应用;当 DDS-β-CD 的取代度为 0.198
                 时,所测样品质量分数为 6%的水溶液透光率仍可达 97%以上。取代度为 0.295 的 DDS-β-CD 的亲水亲油平衡值
                 (HLB)为 16.520,说明其具有一定的起泡能力和乳化能力,且泡沫稳定性较好,在 10 min 时泡沫稳定性为
                 79.08%;对植物油和液体石蜡进行乳化时,乳浊液分出 10 mL 溶液需要的时间分别为 991 和 545 s;DDS-β-CD
                 质量分数为 0.5%时的水包植物油乳液的起始平均粒径为 4.42 μm,并具有良好的稳定性。

                          Preparation of dodecenyl succinate cyclodextrin ester and
                                             its emulsifying properties

                 Abstract: Dodecenyl succinic acid cyclodextrin ester (DDS-β-CD) was prepared from dodecenly succinic
                 anhydride (DDSA)  and  β-cyclodextrin (β-CD) by wet  processing. The  structure  of  DDS-β-CD was
                 confirmed by FTIR. The results showed that DDS-β-CD had lower thermal stability than β-CD, however, its
                 decomposition temperature  was still as high as  225  ℃, which can meet its application in food,  daily
                 chemical and microcapsules. When the degree of substitution of DDS-β-CD was greater than 0.198, the
                 transmittance of the aqueous solution  with 6% mass fraction could  still reach more than  97%.  The
                 hydrophile lipophilic balance (HLB) value of DDS-β-CD with a substitution degree of 0.295 was 16.520,
                 indicating that it had certain foaming ability and emulsifying ability. The foam stability was better (79.08%).
                 The DDS-β-CD was used to emulsify vegetable oil and liquid paraffin, and the corresponding separation
                 time of 10 mL emulsion was 991 and 545 s, respectively. The vegetable oil-in-water emulsion containing
                 0.5% mass fraction DDS-β-CD had an initial average particle size of 4.42 μm and showed good stability.
