                                                               蓝值与压力、保压时间、温度和加水量皆呈正相关
                                                               关系,相关性逐渐增加,透明度与压力、保压时间、
                                                               温度和加水量皆呈负相关关系,并达到显著水平,
                                                               凝胶膨胀率和溶解度与压力、温度、保压时间和加
                                                               水量之间都呈弱相关,或正或负,说明各因素协同
                                                               影响较大。X 射线衍射分析发现淀粉结晶结构由 A
                                                               型向 V 型转化,进一步验证了超高压结合热处理对
                                                               大分子结构及大米粉中各成分之间的影响,后续的
                                                               分析将进一步探讨淀粉与蛋白质结构变化及相关作
                                                               用的变化机制,在实际应用中,也可以调整相关参
                                                               数,获得高品质的相关米制品。
